Baked Oatmeal with Blueberries
Ingredients
- spray oil
- 4 bananas mashed, frozen is good, defrost if using
- 3 cups old fashioned oats
- 1/2 cup flaxseed meal
- 4 Tbs chia seeds
- 6 scoops NOW Pea Protein Powder unsweet
- 2 tsp baking powder
- 2 tsp vanilla extract
- 1 1/2 tsp cinnamon
- 1/8 tsp salt
- 3 cups milk unsweet soy used for nutrition details
- 1 dash of powdered stevia optional use more if you like it sweeter
- 3 cups blueberries fresh or frozen
- 6 large eggs beaten
- 1/2 cup blueberries for topping
Instructions

Preheat oven to 350F.

Spray inside of a 9″x13″ baking dish with oil and set aside.

In a large bowl, mix all ingredients through stevia (if using).

Taste to see if sweet enough. If you want sweeter, add very small amount more of powdered stevia, stir and taste. Adjust as needed.

Add 3 cups of blueberries and beaten eggs to batter and stir to combine.

Pour batter into prepared baking dish and top with remaining 1/2 cup of blueberries.

Place in center rack of pre-heated oven and bake for 45-55 minutes, until center of oatmeal registers 155F on thermometer or toothpick comes out clean.

Let cool and slice into servings.

Keep in fridge, in covered container, for up to 4-5 days or wrapped in foil, then in zip top bag in freezer for up to 4 months.

If you don’t have ripe bananas to mash, you can use 1 cup of unsweet applesauce.
