Caitlin’s 21 Day Meal Prep Challenge has been one of the best programs ever. It’s an investment in eating healthy and anti cancer prevention. I have learned many new things in this program. I thought I was a pretty healthy eater to start with but I have gained new knowledge to take me to a much healthier level of nutrition. She does all the work to make it one of the easiest programs to follow and to customize based on your favorite foods. I am fighting a rare, inoperable Thymoma cancer that has spread to my lungs. Although the cancer is slow growing, it has become life changing. The one that once felt weak, painful, and foreign to me.

This is the same arm that cradled my babies.
That hugs my amazing husband.

Caught my assistant sleeping on the job again—stretched out like she owns the place (which, let’s be honest… she kinda does). 

If her resume happens to cross your desk, just a heads up: her skills include keyboard warming, ignoring deadlines, and demanding pets during Zoom calls. 🐾💤

This year, I gave myself the gift of rest. For my This year, I gave myself the gift of rest.
For my birthday, I went to a sound bowl session at Northside Hospital’s Cancer Support Community—and wow, I left feeling so calm and refreshed.

During the session, you lie down on a mat while a facilitator plays different sound instruments to relax your nervous system. This was my third session and I already can’t wait for the next one!

Northside offers classes like yoga, Tai Chi, cooking demos, caregiver support, and sound healing—all at no cost to cancer survivors and caregivers.

Jar salads are my go-to for quick, nutritious meals on busy days. Here’s what I made this week:

🥕 Farro & Roasted Carrot Salad – Fiber-packed farro, roasted carrots, and sunflower seeds for crunch.

🥬 Barley & Roasted Cauliflower Salad – Hearty barley, roasted cauliflower, chickpeas, and a creamy tahini dressing. (Find this recipe at RussellNutrition.com)

🍚 Brown Rice & Roasted Butternut Squash Salad – Nutritious brown rice, sweet butternut squash, lentils, and walnuts for protein and healthy fats.

These are great for work lunches or quick meals when you don’t have time to cook. Just flip, pour, and enjoy.
