This recipe for creamy roasted tomato pasta is from Sara at @betterfoodguru, and it’s one of my favorites!

I roasted cherry tomatoes, garlic, white beans, and red bell pepper, seasoned with salt, pepper and oregano -- then blended them with silken tofu for a delicious, plant-based sauce. 🍝

Paired with pasta and steamed broccoli, it’s a meal that supports healing and tastes amazing. (I added red pepper flakes too)
