Instead of oatmeal, try this warm, filling breakfast option that is chock full of healthy fats, slow release carbs and satiating protein.
- 1 small handful almonds
- 1 small handful walnuts
- 2 tsp ground flaxseed or chia seed
- 2 eggs
- ¼ cup unsweetened non-dairy milk
- 1 Tbsp nut butter
- 1 small ripe, mashed banana
- ¼ tsp ground cinnamon
- pinch of ground nutmeg and ground ginger
- 1 small handful berries
Add nuts and flax/chia to a food processor. Pulse a few times to make a coarse mixture. Do not process too long or you will make nut butter.
In a medium bowl, whisk eggs and milk. To this, add nut butter and mashed banana – mix well. Add spices (cinnamon, nutmeg, ground ginger). Add pulsed nut/flax mixture and stir everything to combine.
Add everything to medium pot. Gently warm over medium to medium low heat until “N’Oatmeal” reaches desired consistency, stirring frequently. Add berries on top.
Serves 1 large portion or 2 small portions
