A gorgeous soup that is perfect for dinner parties or when you just want a simple meal. So easy. It’s literally done in about 10 minutes. Garnish with freshly grated parmesan cheese and asparagus tip. While it helps to have a Vitamix for this recipe, you can also blend the ingredients in a blender and then heat the soup on the stove.
1 bunch fresh asparagus, trimmed of tough ends
1 cup liquid chicken stock or chicken bouillon
1 cup milk (I use coconut milk)
1 tablespoon oil (I use coconut oil)
1 tablespoon onion, diced
optional: 1 teaspoon xanthum gum (or other thickener, ie. cornstarch)
Steam asparagus in 1 inch of water in shallow skillet for 5 minutes, until slightly tender. Drain. Reserve several steamed asparagus tips for garnish.
Place asparagus and rest of ingredients in Vitamix. Turn on Vitamix and increase speed to 10 and then to High. Blend for 5-6 minutes, until steam escapes from top of Vitamix.
Garnish and serve immediately.
